Compare Mauviel 1830 Cookware Lines
Every line on this page is made in Normandy, France, where Mauviel has been making cookware since 1830. Choosing between them comes down to three things: what kind of cooktop you have, what material you want to cook with, and how much care you are happy to give your pans. This page covers the lines available in Canada.

"Induction: with interface disc" means the pan works on an induction cooktop when used with the Mauviel M'PLUS magnetic interface disc. Thickness is the total wall thickness unless noted. Always check the individual product page for sizes and details.
Copper thickness: M'150 and M'200
Both M'Heritage thicknesses sold in Canada use the same bilaminated construction: a copper exterior bonded to an 18/10 stainless steel interior, roughly 90% copper and 10% stainless. What changes is the wall thickness, and with it the amount of copper. M'150 is 1.5 mm and M'200 is 2.0 mm. The more copper, the better the heat conductivity: heat spreads faster and more evenly across the base and up the sides, so M'200 holds heat more steadily, while M'150 is lighter to handle. The letter after the number tells you the handle: B is brass, S is cast stainless steel and CI is cast iron. Our M'Heritage thickness guide goes deeper.
Who each line is for
M'Heritage M'150 (B, S and CI)
Choose it if you want real copper in the lighter 1.5 mm gauge, with brass, stay-cool stainless or cast iron handles.
Think twice if you cook on induction without a disc, or you want steadier heat (look at M'200).
M'Heritage M'200 (B and CI)
Choose it if you want more copper than M'150 for better heat conductivity and steadier heat, at a weight that still suits everyday cooking.
Think twice if you prefer a lighter pan to lift and toss.
M'3 S / M'TRIPLY S
Choose it if you want a polished copper exterior over an aluminum core and a stainless interior, at a lighter weight and lower price than M'Heritage.
Think twice if you want the thicker solid copper of the M'Heritage lines.
M'Tradition
Choose it if you want hand-made, tin-lined French specialty pieces for gentle, even cooking.
Think twice if you cook at high heat. Tinned copper should stay under 227°C (440°F). On induction, use the interface disc.
M'Passion
Choose it if you make jam, caramel, confectionery or pastry and want purpose-built copper tools.
Think twice if you want everyday pans; unlined copper is for specialty tasks only.
M'COOK (stainless, B, CI and SB handles)
Choose it if you want one dependable 5-ply stainless line for every cooktop, oven and broiler safe, with your choice of handle.
Think twice if you want a hammered finish (see M'Elite) or a dishwasher-safe line (see M'URBAN 4).
M'Elite
Choose it if you want the same 5-ply performance with a polished, hammered exterior.
Think twice if you want a dishwasher-safe line.
M'URBAN 4 and M'URBAN 3
Choose it if you want 2.0 mm tri-ply stainless that is induction ready. M'URBAN 4 is dishwasher safe; M'URBAN 3 has a brushed finish.
Think twice if you want the extra thickness and heat distribution of 5-ply.
M'Pure
Choose it if you cook on gas, electric or ceramic and want fast-heating aluminum with a distinctive onyx-handle design.
Think twice if you have an induction cooktop; M'Pure is not induction compatible.
M'STONE 3
Choose it if you want easy-release nonstick that works on every cooktop, including induction.
Think twice if you sear at very high heat or use metal utensils; choose M'STEEL or M'COOK for that.
M'STEEL
Choose it if you want a carbon steel pan for searing and browning that builds its own nonstick surface over time.
Think twice if you simmer acidic sauces often, or don't want to season and dry your pan after each use. See our seasoning guide.
Induction, explained
Induction cooktops need magnetic cookware. Lines built for induction in our Canadian range are M'COOK (all handle styles), M'Elite, M'URBAN 4, M'URBAN 3, M'INOX 360, M'STONE 3 and M'STEEL. The M'Heritage copper lines, M'3 S / M'TRIPLY S, M'Tradition and M'Passion work on induction with Mauviel's magnetic interface disc. M'Pure is not induction compatible. For more detail, read our induction cookware guide.
Frequently asked questions
Does Mauviel copper cookware work on induction?
Yes, with Mauviel's M'PLUS magnetic interface disc. The M'Heritage copper lines (M'150 and M'200), M'3 S / M'TRIPLY S, M'Tradition and M'Passion all work on induction when used with the disc.
Where is Mauviel cookware made?
Every Mauviel 1830 line compared on this page is made in Normandy, France, where Mauviel has been making cookware since 1830.
What is the difference between M'150 and M'200?
Wall thickness, and with it the amount of copper. M'150 is 1.5 mm and M'200 is 2.0 mm. The more copper, the better the heat conductivity, so M'200 heats most evenly and M'150 is lighter. Both use the same copper and 18/10 stainless steel construction. B means brass handles, S means cast stainless steel handles and CI means cast iron handles.
Is Mauviel copper lined with tin or stainless steel?
Almost all of our copper lines are lined with 18/10 stainless steel. M'Tradition is tin-lined, and some M'Passion moulds are tinned. Tinned copper should not be used above 227°C (440°F), because tin begins to melt at about 230°C (445°F).
What is the difference between M'COOK and M'Elite?
Both are 2.6 mm, 5-ply stainless steel and both work on induction. M'COOK has a polished exterior and comes with stainless, brass, cast iron or brushed handles; M'Elite has a polished and hammered exterior.
Which Mauviel cookware is dishwasher safe?
M'URBAN 4 is dishwasher safe. Our other lines are best washed by hand, and carbon steel in particular should be dried right away and lightly oiled.
How hot should I run my Mauviel pans?
Lower than you might think. Mauviel cookware conducts heat so well that cooktop controls should not be used at full power. Aim for about 60% of maximum, which is level 6 on a 10-point dial.
Is Mauviel cookware oven safe?
Yes. M'COOK, M'Elite and M'STONE 3 are oven and broiler safe, M'COOK CI is oven safe to 300°C (572°F), and M'STEEL is oven safe to 360°C (680°F). Tin-lined M'Tradition pieces should stay under 227°C (440°F). Check each product page for details on lids and handles.
What does "5-ply" or "tri-ply" mean?
Ply is the number of bonded metal layers in the pan wall. Tri-ply pans have three layers and 5-ply pans have five. More layers usually means a thicker, more evenly heating pan.
Do I need to season carbon steel?
Yes. M'STEEL ships with a beeswax coating to prevent rust. Wash it off with very hot water, then season the pan by heating a thin layer of flavourless oil, letting it cool and wiping it clean. Repeat once. The surface darkens and becomes naturally nonstick with use.
