Mauviel Induction Cookware Guide: Which Lines Work on Induction
Last updated: October 14, 2026
In short: most Mauviel stainless steel, nonstick and carbon steel collections sold in Canada work on induction straight out of the box: M'COOK (all handle styles), M'Elite, M'URBAN 3, M'URBAN 4, M'INOX 360, M'STONE 3 and M'STEEL. Traditional copper lines (M'Heritage M'150 and M'200, M'3 S, M'TRIPLY S, M'Tradition and M'Passion) are not magnetic on their own, but every one of them works on induction with the Mauviel M'PLUS magnetic interface disc. M'Pure, made of aluminum, is designed for gas, electric and ceramic cooktops only.

Why traditional copper doesn't work on induction
An induction cooktop doesn't produce heat itself. It generates a high-frequency magnetic field, and that field induces electrical currents directly in the base of the pan, but only if the base contains a ferromagnetic metal such as magnetic stainless steel or iron. Copper is one of the best thermal conductors of any cookware metal, but it is not ferromagnetic: the induction field passes through a traditional copper pan without generating any heat. The same is true of aluminum. That is why classic copper cookware, including M'Heritage, M'Tradition and M'Passion, cannot activate an induction burner on its own.
Already own Mauviel copper? Use the induction interface disc
If you cook on induction and own M'Heritage, or any traditional Mauviel copper, you don't need to replace your cookware. The Mauviel 1830 M'PLUS magnetic interface disc (8.6-in) sits between the burner and your pan: the induction field heats the magnetic stainless steel disc, and the disc transfers that heat to the copper above it. Expect slightly slower response than native induction cookware, since the disc adds a heat-transfer step.
Using the interface disc, step by step
01. Place the M'PLUS interface disc flat on the induction burner.
02. Set your copper pan on top of the disc, centred.
03. Start at moderate power. Copper conducts so efficiently that about 60% of maximum (6 on a dial of 10) is usually plenty.
04. Adjust gradually; the disc adds a heat-transfer step, so give it a moment to respond.
Induction FAQ
Does copper cookware work on induction cooktops?
Traditional copper cookware does not work on induction on its own, because copper is not ferromagnetic and cannot activate the burner's magnetic field. With the M'PLUS magnetic interface disc, any traditional Mauviel copper piece works on an induction burner. If you want induction-ready cookware with no adapter, choose one of Mauviel's stainless steel, nonstick or carbon steel lines.
Which Mauviel collections are induction-compatible out of the box?
In Canada: M'COOK (5-ply stainless, all handle styles), M'Elite (5-ply hammered stainless), M'URBAN 3 and M'URBAN 4 (3-ply stainless), M'INOX 360, M'STONE 3 (nonstick) and M'STEEL (carbon steel). All of them also work on gas, electric, ceramic and halogen cooktops. M'Pure is the exception in our range: it is aluminum and is made for gas, electric and ceramic cooktops, not induction.
I own M'Heritage copper. Do I need to replace it for induction?
No. The Mauviel M'PLUS magnetic interface disc (8.6-in) sits between the burner and your pan and lets M'Heritage, M'Tradition, M'3 S, M'TRIPLY S and M'Passion pieces work on any induction cooktop.
Does the interface disc change cooking performance?
Slightly. The disc adds one heat-transfer step, so response is a little slower than with native induction cookware such as M'COOK or M'STEEL. Start at a moderate power level; about 60% of maximum is usually enough.
Which Mauviel is best for an induction kitchen?
For everyday cooking, M'COOK 5-ply stainless is the most versatile choice and is fully clad to the rim. M'URBAN 4 is the most accessible entry point, M'STEEL carbon steel is ideal for high-heat searing, and M'STONE 3 offers easy-release nonstick. If you love copper, M'Heritage with the interface disc gives you copper's responsiveness on induction.
